When it comes to making avocado toast, use the freshest of veggies. Avocado lovers are swooning right now looking at this post. Avocado toast is good for breakfast or light lunch. The cucumber, though thinly sliced brings the crunch of the whole dish.


Instead of using normal bread, use samoon bread. Before topping the bread, toast it. It heightens the flavor of the toast in general.



Ingredients:



2 slices, Thin 21 Whole Grains Bread (I used Dave’s Killer Bread)



50 g Cucumber, sliced into ribbons (approximately 4 full length ribbons)



50 g Avocado, smashed (approximately half the avocado)



5 g Shallots, shaved (a few shavings)



5 g Jalapeno, shaved (half a jalapeno)



5 g Goat Cheese (a few scrapes with a fork over)



Dash of Black Pepper


Directions:

Scoop out half of the avocado into a small bowl. Using a fork smash the avocado until we get a consistency we like. we prefer to be a little chunky. Season with a dash of pepper. Spread the smashed avocado onto the toast.



Cut your cucumber. I use my medallion slicer but you can also use a sharp knife. Slice a few full-length ribbons as thin as you can. Arrange the ribbon on top of the avocado spread.



Shave a few thin slices of red onion, arrange on top of the cucumber.



Slice your jalapeno and place on top of cucumber. Add as much jalapeno as your heart desires.



Using a fork, scrape your goat cheese block/roll over top of the toast to sprinkle with the cheese.

Avocados are very high in omega 3 fatty acids, the good kind of fat. Monounsaturated fats can help lower cholesterol and improve heart health. Avocados also have a higher percentage of protein — about 4 grams — than other fruits. Their sugar levels are comparatively low. Avocados also contain many essential vitamins and minerals including vitamin B5, vitamin K and fiber, which aids digestion and helps maintain regularity. Additionally, avocados are high in magnesium, phosphorus, iron and potassium, containing even more potassium per gram than bananas


Avocado Toast Prep


Be sure to use ripe avocados. we should be able to press on it gently with our thumb and feel it give a little. If we are in a hurry to ripen an avocado, place it in a paper lunch sack with an apple or a banana for 1-2 days. When it comes to the toast, there are many choices. But we should avoid plain white bread. The highly processed flour and additives make it an unhealthy choice. Stick to whole grain, rye or even a nice sourdough.

Bacon Avocado Tomato Toast – The “BAT” is made on toasted sourdough topped with a smashed avocado, sea salt, crispy bacon and juicy tomatoes. Who doesn’t love bacon?


Smoked Salmon Avocado Toast – Smoked salmon works really well with avocado. And it works even better when you add a mint, chili, lemon and tomato dressing. Snip over some chives and a crack of black pepper, and we have got a really tasty treat!


Caprese Avocado Toast – Caprese avocado toast combines two favorites – caprese salad and avocado toast. Spread the mashed avocado evenly onto toasted bread slices. Top with fresh mozzarella slices, tomatoes, and basil. Season with additional salt and pepper, if desired. Drizzle with balsamic glaze.


Greek Avocado Toast – This might be our favorite! Mash avocado and immediately squeeze in fresh lemon juice and season with salt and pepper. Spread mashed avocado onto toast then top with feta, cherry tomatoes, cucumber, kalamata olives, and dill. Drizzle with olive oil and serve.
